Let them eat cake?

‘Twas my sister’s 8th birthday yesterday, so instead of buying her the usual crappy birthday cake, I made my own speciality, which is her favourite.

Yes yes, calories, yes yes health, yes yes blah bloody blah. She’s eight! 

IMPORTANT: The smelling and tasting of this cake will result in loss of control, loss of clothing and loss of inhibitions. Tests ongoing regarding mere viewing of this cake. You have been warned.

Ingredients:

Plain flour with 1/2 teaspoon of baking powder, or just just self-raising flour.

(You can use margarine, but I ALWAYS use my favoruite “proper” butter)

And half an orange

Method:

Pre-heat oven to 190/Fan180, Gas mark 5-6.

Cut up butter to make it easier to mix

Add caster sugar

When the butter and sugar are creamed enough to be pale and fluffy, add half the egg and half the flour.

Squeeze most of the half-orange into the mix, making sure no pips fall in. Then add the rest of the flour and egg, before squeezing in the rest of the half-orange.

Not forgetting the chocolate chunks…

Slap it in a tray that should be big enough to hold all your mix, with about 1/3 free space for rising…

Pop it in the over for about 50mins (it totally depends on the oven. It’s always a different time for me).

Then…

Of course, you can also use little paper cases to make small little muffin things. In this case, they should only take about 20-25 mins… again, it’ll depend on your oven.

Unfortunately, it was savaged by my family before I could get a photo of the inside… I assure you, it was moist, fluffy, and excellent. Could have done with more than just one bar of chocolate though.

If you’re not an orange fan, don’t worry… you can barely taste it. That just makes it moist. Alternatively, squeeze some lemon instead, which you definitely can taste, and still has the same moistening effect.
